Fruit and Vegetable Processing FAQs

What equipment do I need for a fresh produce processing line?

A typical fresh produce line covers infeed, washing, sorting and inspection, peeling, cutting or coring, drying, and packaging, with waste handling alongside. Fresh-cut salad and vegetable lines usually centre on a washer, cutter and dryer, while fruit lines add peeling and portioning. Proquip Solutions supplies fruit and vegetable processing equipment for each stage to New Zealand growers, packhouses and food manufacturers, including Kronen, ZTI and HiTec machines, plus HYTT vacuum waste transport.

How does a commercial vegetable washing machine work?

A commercial vegetable washing machine moves produce through a water bath with agitation to remove soil, debris and insects without bruising, then lifts it out on a vibrating or belt outfeed so excess water drains away. Washers suit leafy greens, salad, cut vegetables and fruit. Proquip Solutions supplies Kronen vegetable and salad washing machines in New Zealand. See the Kronen range.

How do you dry vegetables and salad after washing?

Washed produce is dried to remove surface water, which extends shelf life and stops packs fogging or going soggy. Gentle drying systems remove water without bruising delicate leaves and cut vegetables, and are usually placed straight after the washer. Proquip Solutions supplies Kronen vegetable drying systems in New Zealand.

Which machines peel kiwifruit, citrus, pineapple and mango?

Fruit peeling machines remove the skin automatically and consistently, with far higher output and less waste than hand peeling. Machines are designed for specific fruit, such as kiwifruit and citrus peelers, pineapple peelers, mango peelers and zest peelers. Proquip Solutions supplies ZTI fruit peeling machines in New Zealand, alongside wedgers, destemmers and toppers. See the ZTI range.

What is a vegetable cutting machine used for?

Vegetable cutting machines slice, shred, wedge, core or floret produce into consistent pieces for fresh-cut packs, ready meals and further processing. Specialist machines handle specific products, such as cabbage cutters and corers, pepper decoring systems, and broccoli and cauliflower floretting lines. Proquip Solutions supplies vegetable cutting and coring machines from Kronen, ZTI and HiTec in New Zealand.

How is fresh produce packaged?

Fresh produce is commonly packed in bags using VFFS (vertical form-fill-seal) machines, in trays with tray sealers, or in modified atmosphere packaging (MAP) to extend shelf life. The right format depends on the product, pack size and retail requirements. Proquip Solutions supplies fresh produce packaging machinery from GKS, Velteko and Reepack in New Zealand. See packaging for fresh produce.

How do I choose the right fruit and vegetable processing equipment?

Start with your products, how they are presented (whole, peeled, cut or packed) and the output you need. Then consider changeover between products, cleaning and hygiene requirements, floor space, and how each machine connects to the rest of your line. Seeing a machine run with your own produce is the most reliable test, and trials can be arranged at our Wiri workshop in Auckland.
