Commercial coleslaw production usually starts with coring the cabbage, then shredding it on a cabbage cutting machine set to the shred width you need, followed by washing and drying before mixing and packing. A machine gives a far more consistent shred and much higher output than hand cutting or a kitchen shredder. Shelf life starts at the cutter. Sharp, well-maintained blades make clean cuts that damage fewer cells, so less juice leaks and the product browns more slowly. Washing straight after cutting removes cell sap and bacteria, and thorough but gentle drying stops packs going soggy. Keeping product cold throughout and using suitable packaging, such as modified atmosphere packs, adds further days.

Yes. KRONEN specialises in fruit, vegetables and salad, but its range also covers meat, sausage, fish, vegan products, baked goods and pet food. Belt cutters such as the KRONEN GS 10-2 slice and strip meat, poultry and fish as well as vegetables, so one machine can often handle several products in the same plant.
