Meat, Poultry and Fish Processing FAQs

What equipment do I need for a meat or poultry processing line?

A typical line covers cutting and portioning, mixing or marinating, curing or brine injection, coating and cooking, and packaging, with hygienic waste handling alongside. The exact setup depends on your products, such as fresh portions, marinated or cured products, or coated and fried items. Proquip Solutions supplies meat, poultry and fish processing machinery to New Zealand food manufacturers, including Ruhle, Kronen, HiTec, Reepack and HYTT equipment.

What is an industrial meat dicer and slicer used for?

Industrial dicers and slicers cut meat, poultry and fish into consistent cubes, strips or slices at production speed, for ready meals, stir-fry, kebabs and further processing. Portion cutters cut fresh meat into set portions, with or without bone, and frozen meat cutters cut frozen blocks without thawing. Proquip Solutions supplies Ruhle dicers, slicers, portion cutters and frozen meat cutters in New Zealand. See the Ruhle range.

What is a vacuum tumbler and how does it work?

A vacuum tumbler rotates meat, poultry or fish in a sealed drum under vacuum. The gentle tumbling and vacuum open the muscle fibres so marinades and brines are absorbed faster and more evenly, improving flavour, tenderness and yield. Many machines also mix and massage the product. Proquip Solutions supplies Ruhle vacuum tumblers and mixing, tumbling and marinating machines in New Zealand.

What does a brine injector do?

A brine injector uses rows of needles to inject brine or marinade evenly through meat, poultry or fish. It is used for curing ham and bacon, and for improving flavour, juiciness and yield in poultry and other products. Machines with more needles suit higher output. Proquip Solutions supplies Ruhle brine injectors in New Zealand, with 17, 59 and 118-needle models.

How do coating and breading machines work?

Coating machines apply flour, batter and crumb to products such as chicken, fish and vegetables in a continuous line, giving an even coating with less waste than coating by hand. They are usually followed by frying or cooking, where oil filtration keeps frying oil clean for longer and improves product quality. Proquip Solutions supplies HiTec coating equipment and oil filtration systems in New Zealand. See the HiTec range.

What is a thermoforming packaging machine?

A thermoforming packaging machine forms trays or pockets from a roll of film, fills them with product, then seals them, often under vacuum or modified atmosphere (MAP) to extend shelf life. It suits high-volume meat, poultry and seafood packing. A tray sealer instead seals film onto pre-made trays, which suits smaller runs and frequent changes. Proquip Solutions supplies Reepack thermoformers, tray sealers and vacuum packaging machines in New Zealand. See the Reepack range.

How can meat and fish processors handle waste more hygienically?

Vacuum transport systems move waste and by-products through sealed pipework straight from the production line to a collection point, so no open bins travel through the processing area. This reduces cross-contamination risk and keeps by-products in a condition where they can still be sold. Proquip Solutions is the New Zealand agency for HYTT vacuum transport systems, used in meat, poultry and fish processing plants.

Are there budget-friendly options for meat processing equipment?

Yes. Alongside our main range, we offer economy machines that aren't listed on the website, as well as used equipment, rentals and finance options to spread the cost. Tell us about your product, output and budget, and we'll recommend the options that suit your situation.
