What is a salad mixer used for in food production?

An industrial salad mixer combines cut vegetables, dressings, sauces and other ingredients evenly and gently, for products such as coleslaw, potato and pasta salads, deli salads, marinated vegetables and ready meal components. It replaces mixing by hand in tubs, giving faster, more consistent batches with less handling. The KRONEN K120 is a salad and delicatessen mixing machine built for this work. How do I mix dressing through salad without crushing it?

Gentle mixing depends on the paddle design, mixing speed and time, and how full the mixer is. Paddles that lift and fold the product, rather than cutting through it, coat each piece without breaking it down. Mixing only as long as needed and not overfilling the bowl also protects delicate ingredients such as leafy salad, soft vegetables and pasta.

How do I get consistent batches every time?

Hand mixing varies between staff and shifts, which shows up as uneven dressing, broken product and complaints. A mixing machine runs the same speed and time for every batch, so each one comes out the same regardless of who is on shift. Consistent batches also make pack weights, coating levels and shelf life more predictable, which matters when supplying supermarkets and food service customers.

How long does cleaning take, and will it pass a hygiene audit?

Cleaning time depends largely on machine design. Smooth stainless steel surfaces, few gaps where food can collect, open access to the mixing area and paddles that can be removed easily all make daily cleaning faster and more thorough, which supports food safety audits and HACCP plans. What size mixer do I need, and can I scale up later?

Mixer size depends on your batch size, how many batches you run per day and how quickly each batch needs to be unloaded into the next stage. A mixer that's too small becomes a bottleneck, while one that's too large mixes small batches unevenly. KRONEN also makes larger mixing machines, such as the K230 with up to 1,800 kg per hour, for processors whose volumes grow.
